Sticky Pan-Roasted Sausages with Grapes
Serves 4

Cooking time 20 minutes
Ingredients
1 tbsp olive oil
450g pork sausages
2 onions, sliced
1 garlic clove, sliced
1 tsp fennel seed
100g South African grapes
2 tbsp red wine vinegar
Method
1. Heat the olive oil in a frying pan over a medium heat, add the sausages and cook for 10 minutes, turning every so often
2. Stir in the onions and leave to cook for 5 more minutes until the sausages are browned and the onions are softened
3. Add the garlic, fennel seeds and grapes and cook for 5 more minutes, stirring regularly, until the grapes are starting to soften
4. Pour over the vinegar and swirl around the pan
5. Cook for a few more minutes until the onions are sticky and the sausages cooked throughout
6. Ideal served with mashed potatoes
