Pitta Pizzas with Melted Brie, Avocado and Grapes

Serves 3-4
Preparation time 5 minutes
Cooking time 5-6 minutes

Ingredients

1 tube sundried tomato paste
4 wholemeal pitta breads
175g ripe brie, cut into long, thin slices
Large handful South African grapes, halved
1 Hass avocado, peeled and roughly diced
Handful parsley leaves, roughly chopped

Method

1. Preheat the oven to 220C/200C Fan/Gas 7

2. Spread the sundried tomato paste evenly over the four pitas and top with 3-4 slices of brie

3. Place on a warmed baking sheet and bake on the top shelf of the oven for approximately 5-6 minutes, until the brie is melted and bubbling

4. Remove from the oven and top with the grapes, avocado and parsley

5. Cut into fingers and serve immediately
